Thaw completely in refrigerator. Pour into a crock-pot and cook, covered, on low for 5-6 hours, stirring no more than twice. With slotted spoon remove vegetables from crock pot and set aside. Pour remaining juices from crock pot into a sauce pan and bring to a boil. Cook until reduced and slightly thickened, about 5-8 minutes. Pour reduced sauce over vegetables and toss together. Serve Ratatouille with rice, small grain pasta or as is. It is just as good the next day. |
